Between the Briars

Between the Briars is a small sustainably managed flower farm based in Glanmire, County Cork. Taylor Nelsen, with the help from his partner grow a varied selection of seasonal flowers and foliages. The floristry approach is wild and whimsical using boldly coloured blooms paired with foraged wild flowers and foliages found near the farm.

Taylor, comes to flower farming as a life long gardener and from the restaurant industry as a qualified pastry chef. Edible flowers and floral cake displays have been a mainstay in his work since leaving pastry college in 2007. Wedding work has given him a keen eye for detail and design. Influence from the catering industry, bouquets and arrangements grown on the farm often include edible flowers as well as herbal foliages like scented geranium, raspberry leaf, apple mint, purple basil and lemon verbena as well as seasonal fruit and berries.

Sustainability is key to Between the Briars’ flower farming ethos and we take pride in supplying Cork City and the surrounding area with beautiful ethical blooms from May to October.
